During my recent trip to Arequipa, I fell in love with Queso Helado.  Directly translated, it means frozen cheese but I think it’s more along the lines of dessert cheese like cheesecake, not sandwich cheese like cheddar.  We bought it from a woman selling it on a corner out of a big tub (unfortunately, I didn’t snap a photo!) and she even let us taste it before handing over S/.2 for our own.  I was shocked.  It was so good!  The consistency was light but ice-cream-ish and it tasted sort of like cheesecake flavor but all I remember thinking is “man, when can I get another one!?”  So, here’s the recipe I’ll be following when I get home in September.  As you can see, there’s actually NO cheese in it, but sure a lot of dairy and sugar- yum!

Ingredients:
2 cinnamon sticks
½ a cup of coconut flakes (100 grams)
½ a gallon of fresh milk
5 cloves
2 cans of evaporated milk
2 cans of condensed milk
Sugar (sufficient amount)
2 tablespoons Vanilla extract

Preparation:
Boil the fresh milk with the cinnamon stick, cloves and the coconut flakes for 20 minutes. Strain into a large bowl (remove the coconut flakes) and mix with the evaporated milk, the condensed milk, the vanilla extract and the sugar. Pour into a rectangular Tupperware. Freeze the ice cream. When serving sprinkle ground cinnamon on top. Enjoy!!
